Scrumptious Salmon Quiche
This quiche is not only beautiful in colour but is also full of goodness: salmon is an excellent source of vitamins and omega-3 fatty acids. Cherry tomatoes may be small but they pack a punch when it comes to vitamins, potassium and fibre. Of all the super healthy greens, kale is king. It is definitley one of the healthiest and most nutritious plant foods in existence.
INGREDIENTS
15g butter
1 small onion, finely chopped
2 small salmon fillets (approximately 250g), cooked and flaked
60g (1/2 cup) self-raising flour
120ml (1/2 cup) milk
3 eggs
60g (1/2 cup) corn
4 cherry tomatoes, chopped
2 kale leaves, chopping finely

METHOD
Preheat the oven to 180 degrees.
Melt butter in large frying pan and sauté onions for about five minutes. Set aside and leave to cool.
Combine milk, eggs and flour then add all remaining ingredients. Pour into a well-greased dish and level out with
the back of a spoon. Bake in the oven for 20-25 minutes or until cooked through.
