Rainbow Wraps

 

Many of us with little ones will be surrounded by rainbows and unicorns (and, if you’re really lucky, rainbow-coloured unicorns!) so let’s embrace this opportunity to make rainbows on their plates and encourage our kiddos to make friends with veggies of all colours to benefit from the full range of nutrients.

 

Try out different combinations, let little hands fill their own, and have lots of wrap-rolling rainbowtastic fun together!

 

Ingredients

1 pack cream cheese/cashew cheese

4 large wraps (these are quinoa)

1 yellow capsicum, sliced

1 carrot, sliced

1 red capsicum, sliced

1 heaped handful baby spinach or other leafy greens, washed

½ cabbage, shredded

100 g poached chicken/smoked salmon/tofu

fresh herbs (basil, parsley, coriander, or thyme)

Method

Spread the cream cheese evenly over the wraps.

 

Lay out strips of each vegetable in rows across the tortillas (yellow, orange, red, green, purple).

 

Top with shredded chicken/salmon/tofu/protein of your choice.

 

Add fresh herbs.

 

Roll up each wrap tightly.

 

Cut crosswise into wheels and serve.
